Gluten Free Gooey Chocolate Cookie Bars

I needed to make an awesome dessert for  our weekly pow-wow. I chose the Gooey Chocolate Cookie Bars.

I found this card at the store and decided I could make this gluten free. So this is what I did:

I used the Betty Crocker Brownie mix (sold at most stores including Target, Safeway, Raley’s and more) instead of the other mix. I purchase mine sometimes through Amazon:

 

I used the Kinnikinnick Oreo cookies. I also get these at Amazon. I have seen them in SELECT stores:

So here is how it turned out!

It was very tasty and a hit. I love being able to create yummy gluten free desserts. Now I want to find an amazing apple treat!

Christmas Service Opportunity: Operation Christmas Child

Operation Christmas Child

It’s been almost 15 years since I started making shoeboxes. I started the Christmas of 1998. I didn’t have my own children yet, now they help me make boxes each year, but back then I chose an age (usually the little ones) and made shoeboxes.

This has been a Christmas tradition for my children since they can probably remember. We usually pick a girl or boy close to their own age group. This year, we are doing one of each, boy and girl, for all three age groups 2-4, 5-9, and 10-14.  Since the beginning of the year, we’ve been putting our 10% away so we can do our shoeboxes. I have a small container that I put all my change in to save the money for the shipping.

What this teaches my children is unmeasurable. It teaches compassion, gratitude, kindness, unselfishness, and so much more. Each item that goes in the box is hand picked by  my children. They each go through the store with their checklist; choosing the items that will go to a child they don’t even know. They are excited to pack their boxes and we wait, with anticipation for the email that tells us where our box has ended up.

This year we are going to write a letter to each child. Along with our letter, we will include a self-addressed stamped envelope, pen, crayons and paper for the children to write back. What if they can’t write? They can send a picture!

Samaratian’s Purse is hoping to reach 100,000,000 boxes this year. I sure hope you will join us in helping them reach their goal!

Christmas Budgeting: Tip #1 Buy Discounted Giftcards

I just purchased a Michael’s gift card for 24% off. I go to Michael’s several times during the Christmas holiday. I get baking items, decorative items, gifts, crafty stuff, etc. I also do alot of AFTER Christmas shopping so I have to take advantage of this deal. Buying discounted gift cards help me with my Christmas budgeting and helps my money to stretch.

Cardpool.com has many gift cards at big discounts.

Here are the some of the stores right now:

  • Barnes and Nobles 11%
  • American Eagle Outfitters 10.5%
  • Bath & Body Works 10%
  • Build A Bear 21%
  • Claire’s 22%
  • Sports Authority 16%

These are all stores that I would buy gifts from. I use my gift cards wisely and use coupons and deals when I can.

There are other websites that sell gift cards, but Cardpool is my favorite. I also have used Giftcards.com.
