Home Storage Solutions 52 Week Challenge: Week 1 Counters

Last week was the first week of the 52 week challenge. Our challenge was to clear the counters. The problem at our house is things don’t get put away….so things build. My challenge is to do a 10 minute Tidy every evening before going to bed. A 10 Minute Challenge is exactly that, I put 10 minutes on my timer and Tidy.

IMG_4262I did do some decluttering around the stove. I decided to move things around and it actually made a little difference on how it looks. I got rid of some things, not much but enough that I felt like I was decluttering.  I also have to commit to getting those dishes out of my sink. It’s a never ending story……

Freezer Cooking: Chicken Marinades #2

I wanted to share a couple of more marinades that I used today for my  freezer cooking session:

Lemon Chicken 

6 boneless skinless chicken breasts (I used thighs and legs)

5 Tablespoons of Lemon Pepper seasoning

2 Tablespoons melted butter

1 sliced lemon

1 teaspoon parsley

Cook: Place in a crockpot, remove lemon rinds and cook on low for 8-10 minutes

Honey Lime Chicken

4 chicken breasts (I used legs and thighs)

1/3 cup GF soy sauce

1/4 cup lime juice (I used lemon)

1/2 cup honey

Mix a freezer ziploc. Remove from marinade before cooking.

You can barbecue on the grill or 350 degrees for 35-45 minutes.

Here is what I ended up making for freezing: Five bags with marinades and one bag of just legs and just thighs. I also had three breasts that I was going to cook but I’m just going to freeze. So that is 8 meals!

End of the Year Tasks: No 6 and 7

These are the last two on the end of the  year task. I already started the 52 Week Organized Home Challenge so I’ll share about that next week. I will be posting a week behind.

6.  Reduce Toy Clutter.

Finally! I had time to get into my son’s room!

We decluttered his “dress up” box. It had lots of old Star Wars costumes that he does not fit into anymore. He used to love hats and we found several too-small hats. So at the end, he only had 1-2 things left.

We also decluttered some stuffed animals and other toys.

I still can’t get him to let go of his Hot Wheels track and cars even though he hasn’t played with them in years.

Maybe next year.

7. Start Freezer Cooking. 

I’ve been freezer cooking for a while. I do, however, get off the tracks sometimes. So this weekend I will be making several marinades and freezing bags of chicken. The chicken was on sale at Safeway for $1.49 a pound. It’s the cheapest I’ve seen it in a while so I bought several trays to get these bags assembled. Here are some of the recipes:
