Menu Board: A New Project

June 14, 2013 By Ligia

I worked on my Recipe Binder a few weeks ago. I wrote about it here and here. I am loving my new binder. It is easy to find my recipes and get cooking. I recently also cleaned up my kitchen workspace so now its sits beautiful on my counter.

So now I need to get organized with the COOKING part. Recently, I ran into a beautiful menu board.002

Oh, it is to die for. I have 30+ recipes that my family enjoys. So instead of buying one, I decided to make my own version.Robby shows you step-by-step how to make your own.  I do thank  RobbyGurl’s  for sharing her amazing menu board, it inspired me and now I will be ready to tackle this project. Be sure to visit her site and check out this amazing project.

My own revisions: I may or may not be using all those pretty numbers. I definately will NOT writing my recipes on index cards. NO WAY! I just put in a ton of time on my binder and it is just as easy to use!

Here are the supplies I will use:

Hopefully, I can finish this up in the next two weeks. I will post my pictures of the finish project as soon as I can.

Recipe Challenge #3: S’mores Nachos

June 12, 2013 By Ligia

Today it was my daughter’s turn to make the recipe she chose for recipe challenge. We are using the Pillsbury Kids Cookbook and making recipes that are not gluten free into gluten free recipes. She chose S’mores Nachos. This is not the picture in the cookbook so ours does not look like that, but the ingredients and steps are pretty much the same.

So we used Schar Honeygrams for our gluten free graham cracker.

Ingredients

Here is our recipe:

8-10 Honeygrams

3/4 c. milk chocolate chips

1 1/2 c. mini marshmellows

pie pan 9in (not glass)

1. Lay all the Honeygrams next to each other on the pan ( we used 2 pie pans)

2. Sprinkle chocolate chips and marshmellows over the Honeygrams.

3. Put the pan under the broiler about 6 inches from the heat. Broil for about 30-60 seconds (ours took longer and we kinda burnt them, but that was still okay) until the marshmellows get puffy and look light brown. Watch carefully so the s’mores don’t burn (ooops, too busy watching Sinbad). Carefully take the pie pan out from under the broiler with the pot holders.

Here are our pictures.

Enjoy!

Recipe Challenge #1: Gluten Free Frozen Brownie Sundae

May 29, 2013 By Ligia

I mentioned last week in my post My Kids’ Recipe Challenge that we would be taking recipes and making them gluten free. This weekend we made A Frozen Brownie Sundae. The original recipe came from Pillsbury Kid Cookbook. It calls for:

  • brownie mix
  • ice cream
  • Andes Creme De Menthe Thins
  • fudge ice cream topping

The only ingredient that we had to substitute was the brownie mix. I used the Betty Crocker Gluten Free Brownie Mixfor our brownie.

  1. Basically you make the brownie as directed in the box.
  2. Cool the brownie on wire rack. Return to pan.
  3. Top with soft ice cream (any flavor really)
  4. Freeze for 8 hours plus
  5. Cut out individual squares and top with fudge and a candy.

Next time I make the brownie sundae I will attempt to make my own brownies from scratch. I want to incorporate the Sneaky Chef into my brownies too. (see this post about Sneaky Chef)

Here is the picture of our creation:

The Reviews: Awesome! They couldn’t get enough. My son kept saying he wanted more.
