Mini Freezer Cooking Day: Marinades

I found some great deals on chicken thighs and legs at the grocery store. The packages were 50% off. So I paid around $12 for two trays of chicken legs and one tray of thighs. They had to be frozen soon so I decided to have a mini Freezer Cooking day and  make some marinades.

These are the easiest marinades:

Garlic Dijon

2 cloves garlic, minced

4T Dijon mustard

2T Lime juice

Mix in a bowl.

I put 7-8 chicken pieces into a Freezer Gallon size ziploc and pour the marinade over it. To get the air out of the bag, zip it  3/4 of the way and then squish gently against your body and then zip all the way. I like to freeze the bag laying down on each other so I always double check my zipper!

I also made the Lemon Chicken which I shared here.

Here it is again:

Lemon Chicken

1 t/ dried thyme leaves

1 t. salt

1/4 t. pepper

1/8 t. garlic powder

1/3 c. lemon juice
Here is one I didn’t make today, but it is also a favorite.

Honey Glazed

1/4 c. butter, melted

1/8 c. soy sauce

1/2 c. honey

Same procedure as above.

I ended up with two bags of chicken pre-marinated, two bags of chicken legs (no marinade) and one bag of thighs. Not bad for $12.

Crock Pot: Gluten Free Saucy Chicken Thighs

This recipe is naturally gluten free as long as you use gluten free products. I’ve been rounding up crockpot recipes and wanted to share another favorite find. This is from an old Taste of Home recipe card:

9 bone-in chicken thighs

1/2 t. salt

1/4 t. pepper

1 1/2 c. barbecue sauce ( I use Bull’s Eye or K.C. Masterpiece)

1/2 c. honey

2 t. prepared mustard (Grey Poupon?)

2 t. Worcestershire sauce

1/8 to 1/2 t. hot pepper sauce (I don’t add this)

1. Sprinkle chicken with salt and pepper. Place on a broiler pan. Broil 4-5 inches from the heat for 3-4 minutes on each side or until lightly browned. Transfer to a crockpot.

2. Meanwhile, combine all other ingredients and pour over chicken once in the crockpot. Cover and cook on low for 4-5 hours or until meat is tender.

We like it with rice or potatoes. The kids like it so I’m happy.
