Recipe Challenge #3: S’mores Nachos

Today it was my daughter’s turn to make the recipe she chose for recipe challenge. We are using the Pillsbury Kids Cookbook and making recipes that are not gluten free into gluten free recipes. She chose S’mores Nachos. This is not the picture in the cookbook so ours does not look like that, but the ingredients and steps are pretty much the same.

So we used Schar Honeygrams for our gluten free graham cracker.

Ingredients

Here is our recipe:

8-10 Honeygrams

3/4 c. milk chocolate chips

1 1/2 c. mini marshmellows

pie pan 9in (not glass)

1. Lay all the Honeygrams next to each other on the pan ( we used 2 pie pans)

2. Sprinkle chocolate chips and marshmellows over the Honeygrams.

3. Put the pan under the broiler about 6 inches from the heat. Broil for about 30-60 seconds (ours took longer and we kinda burnt them, but that was still okay) until the marshmellows get puffy and look light brown. Watch carefully so the s’mores don’t burn (ooops, too busy watching Sinbad). Carefully take the pie pan out from under the broiler with the pot holders.

Recipe Challenge #2: Hot Diggity Dog Pizza Boats

This is our second Recipe Challenge in My Kids’ Recipe Challenge. Last week we made a Gluten Free Brownie Sundae which was awesome! This week we tried the Hot Diggity Dog Pizza Boats from the Pillsbury Kids Cookbook. I also found the recipe online which is here. Our only substitution was the hot dog buns.

So here is OUR gluten free recipe:

4 Udi hot dog buns

1 jar of Classico pizza sauce

4 All Beef Ball Park hot dogs

Lots of mozzerella cheese (although my daughter requested for less cheese next time)

1. Cut the hot dogs into slices.

2. Pour pizza sauce and hot dogs in a pot and cook til warm.

3. Spoon mixture into hot dog buns and top with cheese.

4. We added this step. Bake in oven at 400 degrees until cheese is melted and slightly brown.

We did not add the green olives. Also we substituted meatballs and they were delicious.
