Crock Pot: Gluten Free Saucy Chicken Thighs

This recipe is naturally gluten free as long as you use gluten free products. I’ve been rounding up crockpot recipes and wanted to share another favorite find. This is from an old Taste of Home recipe card:

9 bone-in chicken thighs

1/2 t. salt

1/4 t. pepper

1 1/2 c. barbecue sauce ( I use Bull’s Eye or K.C. Masterpiece)

1/2 c. honey

2 t. prepared mustard (Grey Poupon?)

2 t. Worcestershire sauce

1/8 to 1/2 t. hot pepper sauce (I don’t add this)

1. Sprinkle chicken with salt and pepper. Place on a broiler pan. Broil 4-5 inches from the heat for 3-4 minutes on each side or until lightly browned. Transfer to a crockpot.

2. Meanwhile, combine all other ingredients and pour over chicken once in the crockpot. Cover and cook on low for 4-5 hours or until meat is tender.

We like it with rice or potatoes. The kids like it so I’m happy.

Knock, Knock

This was taken from my daily devotion from The Finishing Touch: Becoming God’s Masterpiece by Chuck Swindoll.

This spoke to me today and I sat at my desk asking myself “what opportunity am I missing?”

My first thought was this blog.

I have been given this opportunity to share my two-cents on many topics that affect my life: diabetes, homeschooling, celiac disease, dyslexia, ADD, gluten-free living, and so much more. I am not an expert on any of these subjects but I can share my life experience and what I’ve learned.  Why is this blog important to me? From the beginning when I started this blog a year ago, my goal was to share about these subjects in order to help someone else if possible.  I have been able to help so many people in my everyday life who are starting their gluten-free journey or their homeschool journey or their diabetes journey. Why not try to share my knowledge with people outside of my everyday life?

My problem is I’m trying to keep up with Joneses of blogging. I compare myself with those wonderful blogs I read every day and I feel like I will never measure up, so maybe, subconsciously, I give up. I’ve decided that this opportunity is mine to take now, and I will do what I need to do today and not worry about everyone else.

So what if I can’t blog 5 days a week? So what if I can’t get all this great material and freebies? I am going to blog about what I am passionate about.

So one of things I like to blog about is food. Gluten free food. So I really want to share more recipes and ideas on that.

I have a child starting high school and a child newly identified with dyslexia. I am trying to lose some weight and get fit. These are all topics that I want to blog about.

So my goal is to blog once a week about gluten free living and once a week about another topic. That’s it.

I love this blog, don’t know if I will be able to do these forever. I need to take the opportunity now.
