Fabulous Gluten Free Mini Corn Dogs

I love making these Mini Corn Dogs. They are so easy and so yummy. Thanks to Pamela’s for sharing it. Here is the link: Mini Corn Dogs

Ingredients:

  • 1 pack uncured, nitrate-free 100% beef hot dogs (I use all Beef Oscar Meyer’s)
  • 2 cups Pamela’s Gluten Free Bread Mix (no yeast needed in this recipe)
  • 1 cup yellow cornmeal
  • 1 tsp sea salt
  • 2 eggs slightly beaten
  • 2 cups warm water
  • I find that this recipe is too much, so I only make half the batter. I can still coat about 8 hot dogs (16 halves).

Directions:

In a 12-inch skillet heat approximately 2-inches of oil to 375°. ( I do not check temp, I just wait until its hot)

Slice hot dogs into quarters and set aside.

Mix dry ingredients together.

Lightly whisk eggs and water. Add wet ingredients to dry ingredients, whisking until smooth.

Heavily coat sliced hot dogs in batter ann place in hot oil for about 4 minutes until dark golden brown.

Drain hot dogs on cooling rack and serve.

Family Time Fitness Core 1 is Free!!!!

I have been teaching a kindergarten-first grade co-op class using their co-op curriculum which is very similar to Core 1 and we love it. The kids have improved so much since September and I know I can chalk it up to Family time Fitness!

Gluten Free Apple Swirl Coffee Cake

IMG_2636I am a big dessert eater. When I switched my kitchen to gluten free for the sake of my two celiac boys, I was bummed because I love desserts especially apple desserts. So I made it my mission to find wonderful gluten free substitutes. So here is new one. I got this recipe from Betty Crocker.com.

Gluten Free Apple Swirl Coffee Cake

Ingredients
4 Eggs
3/4 cup milk
1/2 cup butter, melted
2 teaspoons vanilla
1 box of Bisquick Gluten Free Mix (3 cups)
2/3 cup granulated sugar
1 can (21 oz) of fruit pie filling, I used apple

Glaze:
1 cup powdered sugar
2 tablespoons milk

Prep:

Heat oven to 375 degrees. Grease your pan. I used a 9 x 13. I think I will use two small ones next time and freeze one.

In a large bowl, mix first six ingredients until blended. Spread 2/3 of batter (about 2 1/2 cups) in the pan. If you are using smaller pans about 1/3 of batter in each pan.

Spread pie filling over batter. Drop remaining batter by tablespoons onto pie filling.

Bake 20-25 minutes until golden brown. Meanwhile mix glaze ingredients together. Drizzle over warm coffee cake.
